Salsa Verde (Italian)

Versatile fresh herb green sauce

40g Basil
40g Flat Leaf parsley
2 tbsp Capers (Salted)
1 pcs Egg (hard-boiled)
as-needed Canned anchovies
as-needed Gherkin
6 g Baking Powder
1 pcs Lemon
4 cloves Garlic
as-needed Olive Oil
2 tsp Red-wine vinegar
as-needed Green pepper
Red pepper flakes


Mix everything except olive oil on a food processor, blitz to a rough texture. Add olive oil to the mix, emulsify.
